Easy Summer Pasta Salad

This Summer Pasta Salad is a vibrant and delicious way to enjoy the flavors of the season. Packed with fresh veggies and coated with our unique Sweet Mustard, it's a perfect side dish for BBQs, picnics, or a light lunch for your little one.
Ingredients:
- Cooked pasta (fusilli, penne, or your little's favorite shape)
- Beyond the Bib Sweet Mustard
- Any veggies you have on hand! Some suggestions:
- cherry tomatoes, halved
- cucumber, diced
- bell peppers, diced (use a mix of colors for a vibrant look)
- red onion, finely chopped
- cooked eggplant, diced
- cooked zucchini, diced
- cooked corn kernals
- Optional add ins:
- black olives, halved
- feta cheese, crumbled
Instructions:
1. Cook the pasta: According to package instructions, drain and rinse under cold water to cool. Set aside.
2. Cook the veggies: sauté small pieces until soft.
3. Combine the ingredients: In a large bowl, combine the cooked pasta, veggies & add ins.
4. Add the sauce : Pour Beyond the Bib Sweet Mustard over the pasta and veggies. Toss gently to coat everything evenly.
5. Serve and watch you little one enjoy!
Tips:
- Add protein: For a heartier meal, add grilled chicken, shrimp, or chickpeas. Just be sure to cut protein in age appropriate bite size.
- Make it ahead: This salad can be made a day in advance and stored in the fridge. Just give it a good toss before serving.
