BBQ Bean Quesadillas

BBQ Sauce Vegetarian Black Bean Quesadillas Toddler Meal Ideas for Baby Lead Weaning and Picky Eaters

Protein packed with black beans and ready in just under 20 minutes, these are quick and easy to make, making them a great option for busy weeknights or lazy weekends.  These ingredients are likely already in your kitchen and when combined together make a yummy meal perfect for your little ones lunch, dinner or snack.

Serves: 4

Ingredients:

  • 2 medium-sized tortillas
  • 1 can of black beans, drained and rinsed
  • 1/2 cup of BTB BBQ sauce
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of diced red onion
  • 1/4 cup of diced bell pepper
  • 2 tablespoons of olive oil

Instructions:

    1. Heat a skillet over medium heat and add the olive oil.
    2. Add the diced red onion and bell pepper to the skillet and cook for about 2-3 minutes or until softened.
    3. Add the black beans and BBQ sauce to the skillet and stir to combine. Cook for about 5 minutes or until the black beans are heated through and the sauce has thickened slightly.
    4. Remove the skillet from the heat and set aside.
    5. Heat a separate skillet over medium heat and place one tortilla in the skillet.
    6. Sprinkle a handful of shredded cheddar cheese on half of the tortilla.
    7. Spoon a generous amount of the black bean and BBQ sauce mixture on top of the cheese.
    8. Fold the tortilla in half or add a second tortilla on top and press down lightly with a spatula.
    9. Cook the quesadilla for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
    10. Repeat steps 5-9 with the remaining tortillas and filling.

Once the quesadillas are cooked, allow them to cool slightly before serving to your little one. You can cut them into small pieces or strips for easy handling.
